CAKE BOSS on DIY wedding cakes!

Last week, I had the pleasure of attending an exclusive Discovery Travel & Living launch of one of it’s latest shows, Cake Boss. Cake Boss airs on Travel & Living every Wednesday evening, 7 pm (SG time) and follows the entertaining Italian Buddy Valastro, who runs the family cake store Carlo’s Cakes in New Jersey. So to get us all in the mood for the show, we had a free lesson in cake decorating!

For all the ladies who are planning their wedding and baking their cake at the same time… this is for you.

Here are some tips from Miss Loo, an experienced Malaysian wedding cake decorator who represented the Cake Boss.

1. If you want to DIY your wedding cake, one method is to buy ready made sugar flowers – so you just bake the cake then decorate it with these pre-made flowers. OR alternatively, take a class in cake decoration and make some simple decorations!

2. For a wedding cake, it takes approx 4 months as you need to make a lot of flowers – which need time to dry. With our S.E Asia climate, its very humid so it takes longer than say in colder countries.

3. Popular wedding cake flavours to go for – fruitcake (if your design is difficult). But usually buttercake as most ppl like it!

4. Remember to choose a common cake flavour,  Durian is not a wedding winner!

5. If you’re making a multi-tiered cake, make sure there is a strong support base. The heavier the cake’s weight, the stronger the bottom board should be.

6. Icing is important! Each tier should be equal, with the sides and top must be smoothly and evenly covered – don’t let any cake show through – which may happen if you don’t use enough icing. So be generous with the butter-cream icing as the cake absorbs some of it while it sits.

7. For a smooth (and quick) finsh, use a comb.

8. As we live in the hot tropics, you must be careful as to what butter-cream you use. If its too soft the butter-cream icing may melt or even slide off your cake. Tip: Bake your cake in an air-conditioned environment and if your icing turns runny just pop it back in the fridge till it hardens up a bit.

Top five wedding planning mistakes to avoid

Planning a wedding is not easy business and in the whole frenzy, many potentially avoidable faux pas tend to be made. Here are a couple of common mistakes that tend to throw couples off track :

1. Partaking in last-minute beauty treatments.

Many brides think that scheduling a facial the day before the wedding will leave their skin looking angelic on their big days. Thinking of tanning the day before your wedding? Think again as you may end up with blisters instead of sun-kissed skin. Last-minute beauty treatments can lead to breakouts, mistakes or, even worse, serious infections.

2. Exceeding your budget.

It costs a lot of money to throw a wedding. Excited brides start booking vendors and making purchases without having a real budget and then are shocked to discover they’ve already spent all of their money (or parents’ money) and don’t yet have half the things they need. Planning a wedding is serious business. Make a budget and keep track of your expenditures so you won’t be walking naked down the aisle.

3. Ordering your wedding gown too late.

If your heart is set on a couture gown, be sure to order by the six-month mark since your dress will be custom-made and, many times, made overseas. In addition, most off-the-rack dresses will require alterations, so make certain that you have enough time to get the gown fitted properly. You’ll want to leave plenty of time for shipping and for your fittings. The same goes for the bridesmaid dresses.

4. Underestimating the importance of a good photographer.

Your wedding is potentially the most important day of your life and you will definitely want lovely images to remember it by. It’s always a good investment to hire the best photographer who can truly capture those priceless moments. At all costs avoid depending on shots from family or friends unless they’re professionals.

5. Taking your partner’s opinions for granted.

After all it’s his day too. Even if his requests don’t always conform to your vision, you want him to enjoy the wedding as much as you. Not only should you be willing to compromise, but also consider biting the bullet once in a while and telling him that you like his ideas. Even if you wind up with hot dogs on the menu or a Rolling Stones cover band, chances are good you’ll appreciate these quirkier decisions down the road. Plus, you’ll make him really happy – as he should be.

It’s a Western custom commonly practiced by couples planning their upcoming wedding to send out ‘Save the date’ cards. These cards should be typically sent out about 3-4 months before the wedding in order to enable your guests to keep that special day free. However, this custom can be carried out as creatively as you wish, meaning you don’t necessarily have to send out a card. Even in Chinese culture, it is also tradition to send out a ‘little sweet’ with your invitation card, such as Lo Po Peng (wife biscuit). However in these modern times, what better sweet could there be, besides the classic cupcake!

Monique Lhuillier Bridal Collection for spring 2010

Think bridal gown and it seems the mind immediately leaps onto Vera Wang and her fantastic designs. I did a wee bit of research and discovered that already renowned Monique Lhuillier (famous for designing countless gowns for the who’s who of Hollywood) is a pretty amazing wedding gown creator herself.

Lhuillier describes her collection as “Inspired by the use of lightweight fabrics, this spring is soft and ethereal. Layers of delicate silk organza and tulle have been used to create romantic silhouettes…my favorite part of the collection is the light quality to it. It makes you feel as if you’re walking on a cloud.

So without further adieu:

This traditional strapless gown has a feminine sweetheart neckline with a a full skirt (excellent for swishing about while dancing the night away!)

With three outlets under their belts and 25 flavours to boot, founders Ben and Joanne have a lot to be proud of! Here at TWG, we took the liberty of interviewing Ben and Joanne and give you a glimpse into their wonderfully colourful cupcake world!

How about you guys tell us a lil bit about yourselves and how you met?

J: We met over a messy crab-eating dinner in good ole’ Port Klang about 10 years ago. Ben was working in UK at the time and was back on holidays. We didn’t hit it off, in fact we were so ticked off with each other, we didn’t want to have anything to do with each other!

B: Until today, I still don’t get why we were so ticked off with each other. We didn’t even speak to each other. Jo thought I was obnoxious and I thought she just had a bad day. It was anything but love at first sight.

J: As fate would have it, we met again on 11th of September, 2001 – that’s right, on the very day of the 911 disaster. We were seated next to each other while watching a play at the old Actor’s Studio in BSC and started receiving text messages through the night about the towers collapsing. It was then that things started to take off. Funny how it took a disaster to bring us together. LOL.

B: Actually, the back story to that was a mutual friend of ours actually set me up for a blind date with someone else that night. Turned out we hit it off instead.

How did you guys first discover this common passion for cupcakes?

J: I don’t know if we have a “common” passion for cupcakes. We have a common direction, a common goal and a common desire to achieve in business. Cupcakes came along because I love to bake and we saw an opportunity when we discovered a lack of beautiful and delicious cupcakes in Malaysia… and the entrepreneur blood in us, pounced on it.

Who was the genius behind the idea of starting a chain of cupcake stores?

J: Me!

B: Me! Well, it never started with this grand plan to open a chain of stores. In fact, we started small by setting up a booth at the weekend flea market at the Curve shopping mall – just to test the market. One thing led to another and before we knew it we opened a retail store. Having said that, we knew of the immense opportunity and the potential of a new market blossoming and felt we had a good chance to be one of the pioneers of the cupcake industry. So there was always this dream of having created a brand that could span across the country but it never really felt real until we opened our first retail store.

J: I think it was just a natural progression. We expanded as our level of maturity in business and minds expanded.

What goes on in the kitchen that makes your cupcakes so scrumptious and special?

J: That’s spilling the beans, don’t you think?:)  But if you really must know, it’s the love & joy we put into making those crazy, yummy cupcakes.

B: And you can see it and taste it. For instance, there is a certain style to which we frost some of the cupcakes such as our signature Fatal Attraction and Back to Basics. And it can be painstakingly tedious because everything is crafted by hand. Imagine frosting almost 1000 of those cupcakes everyday. You’ve got to love it to do it well! And it’s because we’re crazy about our cupcakes that we put in the best ingredients. Consumers can tell right away if you’re using good stuff – its in the smell, flavour, texture, mouth-feel & aftertaste.

Finally… what else can a bride use cupcakes for apart from cupcake towers?

J: Cupcake wedding favors is a popular one. Hen’s night or Bachelor’s night are also good occasions for cupcakes. Save the date cupcakes are picking up in popularity (handing out a little sweet treat with your invitation).
A more recent one we did was for the games you play on the bride and groom at the wedding banquet – I believe the bride and groom had to eat the cupcake with their hands tied together…. A kiss was inevitable.

Choose your wedding colour theme

Where do I start? That’s the question that pops up in every bride’s head when she ventures into the planning phase of her wedding. Should you perhaps begin with the dress, cake or maybe even the venue? An easier alternative would be starting with the colour theme of your wedding. Once you’ve chosen your preferred colour , you have a guideline for everything else.

When determining which wedding color combination you will use for your wedding and reception, there are several different ways to brainstorm and make your final choice.

Tips:

your favorite color

a color that compliments the ceremony location

colors that enhance the look of the reception room

the color of your favorite flower

a color traditionally appropriate for the season in which you are getting married

If you happen to be planning a wedding in a four-seasoned country and can’t figure out what colour would suit your chosen season, the following pointers will come in handy for you.

For spring weddings, examples of suitable colours are soft colours that blend well with the season, this includes mint green, baby blue, soft pink, lemon yellow or lavender. Some of the popular combinations include deep pink with melon hues. Other spring wedding colors would be a tinge of pale blue against the elegance of pearl white or light yellow. Choose two major colors and add a complimenting shade to complete the look.

For a summer wedding, the colours chosen usually include shades of lively colors as well as some tints of warm sunshine. You can’t go wrong with pastel colours whether vivid or subtle.

Autumn is such a beautiful time of the year. One very popular fall wedding color is orange which can be paired with different colors. Here are some of the colors you can mix with orange: lilac, silver, burgundy, purple, green, aqua, turquoise, sky blue, chocolate brown, gold, or watermelon. Other popular fall wedding colors are: burgundy, dark green, navy blue, silver, gold, creams, burnt orange,  brown, plum, fuchsia, purple, turquoise, slate blue, taupe, and lavender.

Lastly, for winter weddings go for colours which truly represent the season of snow, such as silver, white and light blue. Also, you can make this occasion more glitzy if you add metallic colors to your scheme especially if you intend to have the event in the evening. Try gold, brass, bronze, and copper. Using cool colors like blue and green to complement your primary color scheme (silver, white and light blue) would also work perfectly.

There are endless possibilites when it comes to choosing the perfect colour theme for your wedding. At the end of the day you should choose something that truly represents your personality and reveals your “true colours”.
